The De Buyer Inocuivre 9cm mini saucepan is a small copper pan designed for precision sauce work and individual portion cookery. Built to De Buyer’s Inocuivre specification, it combines a high copper content construction with a solid brass handle, giving it the heat response and the appearance expected in a professional kitchen setting.
Copper is the material of choice for sauce work because of the way it responds to heat — quickly and evenly across the entire base and sides. At this size, that responsiveness is particularly useful when working with small quantities of sauce, butter, or reduction where temperature control is critical and the margin for error is small. The pan heats rapidly and, equally importantly, cools quickly when moved off the heat, giving the cook genuine control over the cooking process.
In practical terms, this pan suits table-side service, mise en place presentation, and individual portion finishing. It is well suited to fine dining kitchens where cookware is visible to the guest, as well as professional kitchens where copper is the preferred material for sauce preparation.
- High copper content supports responsive, even heat distribution
- Solid brass handle stays cool longer and adds durability
- Compact 9cm diameter suits individual portions and small-batch sauces
- Suitable for direct flame, electric, and solid-top ranges — not induction
- Appropriate for oven-to-table presentation in dining environments
It is worth noting that this pan is not suitable for induction hobs, so kitchen operators using induction ranges should check compatibility before purchasing. At 0.3 litre capacity, this is a specialist piece rather than a general-purpose pan.
