This Pujadas roast pan is made from cast aluminium finished in a bronze exterior coating. It is designed to be used without a lid — though a compatible lid is available separately — making it particularly well suited to dishes that benefit from moisture reduction during cooking, such as rice and braised or stewed preparations where evaporation is part of the process.
Cast aluminium distributes heat evenly across the base and sides, which helps avoid hot spots that can scorch ingredients during longer cooking times. The ground base ensures good contact with flat cooking surfaces, and the pan holds its shape well under the repeated thermal cycling that commercial kitchen use demands. The non-stick interior surface reduces residue build-up and makes it easier to clean between services.
- Even heat distribution reduces risk of scorching during long cook times
- Non-stick interior simplifies cleaning and reduces food waste
- Lidless design suits dishes requiring controlled evaporation
- Ground base gives stable contact on flat hobs and solid tops
- Impact-resistant cast construction holds shape under heavy use
This is a mid-sized pan and will suit prep kitchens, smaller restaurants, and catering operations producing modest batch volumes. For high-volume kitchens producing large quantities of rice, braised dishes, or roasted vegetables in a single pass, a larger format pan is likely to be more practical. It is worth confirming hob compatibility before ordering, as cast aluminium pans of this style are best suited to gas ranges and solid-top electric surfaces rather than induction.
If you are putting together a new cookware range or are unsure whether this size suits your typical batch size, the team is happy to talk it through with you.
